Menu Plan Monday

Since we are moving in less than a month I am trying to clean out the freezer and pantry so we'll have less to move. Here's our menu for this week:

MONDAY:

Eggplant and Ground Beef Casserole

TUESDAY (college night):

Leftovers or frozen meal

Mexican Chicken

THURSDAY (college night):

Menu Plan Monday

So, I am trying to make better food choices for health reasons. And sometimes that is hard when you don't know what the heck you are going to fix for dinner. And cooking for one adult and one young teen is challenging. SO, I am going to try menu planning again. It has worked in the past and I am sure it will help now.

MONDAY:

Baked fish
Yellow Squash and Zucchini
Pasta

TUESDAY (college night):

Leftovers or frozen meal

WEDNESDAY:

Cube Steak
Cottage Cheese
Corn on the Cob

THURSDAY (college night):

Leftovers or frozen meal

FRIDAY:

Chicken and Yellow Rice (new recipe from Publix)
Black Beans

SATURDAY:

Steak
Baked Potato
Acorn Squash

SUNDAY:

Dinner Out

Menu Plan Monday

I used to Menu Plan every week and have since stopped. It is crazy to try and figure out what to cook and shop for if you have no plan. So, I am going to start menu planning again. My plan is very unstructured. I come up with five meals and they may or may not be made on the day I planned. We always have leftovers one night and we usually go out to dinner another and that is why I only plan five meals. So with no further ado, I present my menu plan for this week:

MONDAY:
Best Ever Meatloaf
AuGratin Potatoes
Sauteed Zucchini & Yellow Squash

TUESDAY:
BBQ Sloppy Joes
Potato Salad
Chips

WEDNESDAY: (Both new recipes, click to go to link with recipe)
Easy Picnic Chicken
Baked Zucchini

THURSDAY:
Roast Beef Sandwiches (in crockpot)
Corn
Noodles

FRIDAY:
Pizza

I am in the mood for Lemon Meringue Pie so thought I would try this recipe. I am hoping my family enjoys my new recipes. Have a great week!

Last week my menu planning was minimal since Dave was out of town. Brent and I had quick and easy stuff that I didn't have to plan. Here is this week's menu:
Monday: Skillet Meatloaf, Scalloped Potatoes, Squash
Tuesday: Southwest Chicken Skillet, Rice w/Black Beans
Wednesday: Skillet Mac & Beef, Brussel Sprouts
Thursday: Smothered Steak (crockpot), Savory Chopped Spinach
Friday: Ham & Cheese Sandwich Spread

Menu Plan Monday

I am having a hard time keeping track of my recipes once I decide I am going to make them. I pull the recipes from my box, make out my grocery list and then promptly loose the recipe. It is driving me crazy. This week I have planned.

Monday - Tuna Patties
Tuesday - Cub Steaks w/Gravy
Wednesday - Spinach Lasagna Casserole
Thursday - Marinated Pork Chops (on the grill)
Friday - Green Enchilada Casserole

Menu Plan Monday

Although, I love menu planning, I have determined that I don't need to menu plan for seven days. I need to have a day or two for eating out or eating leftovers. So, that being said, here is my 5 day menu plan for this week

Monday - Green Enchilada Casserole (our attempt to celebrate Cinco de Mayo)
10-12 small tortillas
1 can diced green chilis
1 can refried beans
1 lb ground beef
diced onion
8 oz pkg shredded mexican cheese
Velvetta cheese
4 c milk
cornstarch
Brown ground beef and onion, drain. Add shredded cheese and refried beans to meat. Make a white sauce with milk, cornstarch and Velvetta cheese (make as cheesy as you like). Stir until thickened and cheese is melted. Add green chilies to white sauce. Place meat mixture in tortillas and roll tightly, placing them seam down in 9" x 13" pan. Pour cheese sauce over tortillas. Cover with foil and bake 35-35 mins at 350 degrees.

Tuesday - Spaghetti, green salad

Wednesday - Italian Baked Chicken

Thursday - Cube Steaks w/Gravy

Friday - Mexican Baked Fish
1 T oil
1/4 c chopped onion
2 garlic cloves, minced
1 (16 oz) can tomatoes, drained and chopped
1 T green chilies
1 tsp chili powder
1/8 tsp pepper
1 egg white
1 T milk
1/2 c cornmeal
4 flounder fillets
1/2 c shredded mozzarella
Preheat oven to 350 degrees. In small saucepan in oil cook onion and garlic until soft. Add tomatoes, chilies, chili powder and pepper; bring to boil. Reduce heat, cover and simmer 15 mins. In shallow dish beat egg white and milk. Put cornmeal on waxed paper. Dip fillets in egg, coat with cornmeal. In baking dish, place fillets in a single layer. Put sauce over fish, sprinkle with cheese. Bake 20 mins.
